Ingredients

400g of spaghetti

6 cloves of garlic, thinly sliced

1/2 cup of extra-virgin olive oil

1 teaspoon of red pepper flakes (adjust to taste)

1/2 cup of fresh parsley, finely chopped

Zest of 1 lemon

Juice of 1 lemon

1/2 cup of grated Parmesan cheese (optional)

Salt to taste

Freshly cracked black pepper to taste

Cherry tomatoes, halved (about 1 cup, optional for garnish)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.

Garlic Infusion: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Sauté until the garlic is lightly golden but not burned, about 2-3 minutes.

Combine: Add the drained spaghetti directly into the skillet with the garlic oil. Toss to coat the pasta evenly. If the pasta seems dry, pour in a little of the reserved pasta cooking water to achieve desired consistency.

Flavor Boost: Stir in the chopped parsley, lemon zest, and lemon juice. Toss everything together until well combined.

Serve: Divide into serving bowls. If using, sprinkle grated Parmesan cheese on top, and garnish with cherry tomatoes for a pop of color. Finish with salt and freshly cracked black pepper to taste.

Enjoy: This dish is best enjoyed immediately while hot!
