Ingredients

2 cups frozen peas (or fresh peas if in season)

1 tablespoon unsalted butter

1 tablespoon olive oil

1 small onion, finely chopped

1 garlic clove, minced

1/4 cup vegetable or chicken broth

1 tablespoon fresh mint, chopped (or 1 teaspoon dried mint)

Salt and pepper to taste

A squeeze of lemon juice (optional)

Instructions

Prepare the peas: If using frozen peas, place them in a pot of boiling water for about 3-5 minutes until tender. If using fresh peas, shell them and boil for the same duration. Drain the peas and set aside.

Sauté the aromatics: In a medium saucepan, heat the olive oil and butter over medium heat. Add the finely chopped onion and cook until soft and translucent, about 4-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Combine with broth: Pour in the vegetable or chicken broth to the onion and garlic mixture. Bring to a gentle simmer.

Mix in the peas: Add the cooked peas to the saucepan. Stir well and let them warm through for about 3 minutes, allowing the flavors to meld.

Mash it up: Using a potato masher or an immersion blender, mash the peas to your desired consistency—either completely smooth or slightly chunky.

Season it well: Stir in the chopped mint, and season with salt, pepper, and a squeeze of lemon juice to brighten the flavors.

Serve warm: Remove from heat and transfer to a serving bowl. Enjoy your mushy peas as a comforting side dish or as a component in a delicious meal.
