8 oz linguine or fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, diced

1 green bell pepper, diced

1 tsp smoked paprika

1 tsp Cajun seasoning (adjust to taste)

1/2 tsp dried oregano

1/4 tsp cayenne pepper (optional for extra heat)

Salt and black pepper, to taste

1 cup heavy cream

1/2 cup chicken or vegetable broth

2 cups fresh spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Sauté the Vegetables: In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté the onion and bell peppers until softened, about 4-5 minutes. Stir in the minced garlic and cook for 1-2 more minutes until fragrant. Remove the vegetables from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Sprinkle the shrimp with smoked paprika, Cajun seasoning, oregano, cayenne pepper, salt, and black pepper. Add them to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, lower the heat to medium and pour in the heavy cream and chicken or vegetable broth. Stir well to combine, bringing it to a simmer. Allow it to cook for about 3-4 minutes, letting it thicken slightly.

          Combine Everything: Add the sautéed vegetables and shrimp back into the skillet. Mix in the fresh spinach and let it wilt for about a minute. Then, add in the cooked pasta, tossing everything together gently. If the pasta seems dry, add a splash of reserved pasta water to loosen it up.

            Finish and Serve: Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley and lemon wedges on the side for a zesty finish.
