1 lb boneless, skinless chicken thighs, sliced into thin strips

1 tablespoon cornstarch

3 tablespoons vegetable oil

2 cloves garlic, minced

1 inch ginger, minced

1/2 cup green onions, chopped (reserve some for garnish)

1/2 cup soy sauce

1/4 cup brown sugar

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon crushed red pepper flakes (adjust to taste)

Cooked jasmine rice or egg noodles, for serving

Sesame seeds, for garnish

Prepare the Chicken: In a bowl, toss the sliced chicken thighs with cornstarch until evenly coated. This will give the chicken a crispy texture when cooked.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once the oil is hot, add the chicken in a single layer (you may need to do this in batches) and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

      Sauté Aromatics: In the same skillet, add minced garlic and ginger. Sauté for about 30 seconds until fragrant, being careful not to burn them.

        Make the Sauce: Add the green onions (reserving some for garnish), soy sauce, brown sugar, rice vinegar, sesame oil, and crushed red pepper flakes to the skillet. Stir well to combine. Allow the sauce to simmer for about 2-3 minutes until it thickens slightly.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet. Toss everything together, ensuring that the chicken is well coated in the sauce. Cook for an additional 2 minutes, allowing the flavors to meld.
