1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup sour cream

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

For the Crumble Topping:

1/2 cup all-purpose flour

1/2 cup old-fashioned oats

1/3 cup brown sugar, packed

1/4 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/4 teaspoon salt

For Serving:

Powdered sugar (for dusting)

Optional: Whipped cream or vanilla ice cream

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

Prepare the Crumble Topping: In a medium bowl, combine 1/2 cup flour, oats, brown sugar, melted butter, cinnamon, and salt. Mix until the mixture resembles coarse crumbs. Set aside.

Make the Cake Batter: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add Wet Ingredients: Add in the eggs, one at a time, mixing well after each addition. Then, stir in the sour cream and vanilla extract until combined.

Blend Dry Ingredients: In a separate bowl, whisk together the 2 cups of flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.

Fold in Apples: Gently fold in the diced apples until evenly distributed throughout the batter.

Assemble the Cake: Pour the cake batter into the prepared baking pan, spreading it evenly. Sprinkle the crumble topping generously over the cake batter.

Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the cake to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar before serving. Optional: Serve with a dollop of whipped cream or a scoop of vanilla ice cream on top.
