2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Freshly ground black pepper, to taste

1/4 cup marinara sauce (for dipping)

Fresh basil leaves, for garnish

Olive oil, for frying

Instructions
 

Prepare Zucchini: Begin by place the grated zucchinis in a clean kitchen towel or cheesecloth. Sprinkle with salt and let sit for about 10 minutes. This helps to draw out excess moisture.

    Make Fritter Mix: After 10 minutes, wring out the zucchini in the towel to remove as much moisture as possible. In a medium-sized bowl, combine the drained zucchini, flour, Parmesan, mozzarella, egg, garlic powder, Italian seasoning, and black pepper. Mix until well combined.

      Heat the Pan: In a large skillet, heat a couple of tablespoons of olive oil over medium heat. Ensure the oil is hot, but not smoking.

        Form the Fritters: Using a spoon or a small ice cream scoop, drop heaping tablespoons of the zucchini mixture into the hot skillet. Flatten slightly with the back of the spoon to form small discs.

          Cook the Fritters: Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy. You may need to work in batches, so don't overcrowd the pan. Add more oil as needed.

            Drain the Fritters: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
