Mini Zucchini Parm Waffle Sliders

2 medium zucchini, grated

1 teaspoon salt

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/4 teaspoon black pepper

1/2 cup breadcrumbs (preferably Italian-style)

Cooking spray or olive oil for greasing

Marinara sauce, for dipping

Fresh basil leaves, for garnish

Instructions
 

Prepare the Zucchini:

    - Place the grated zucchini in a clean kitchen towel or cheesecloth. Sprinkle with 1 teaspoon of salt and let it sit for about 10-15 minutes to draw out excess moisture. Once rested, squeeze the towel or cheesecloth to remove as much liquid as possible from the zucchini.

      Make the Waffle Batter:

        - In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, mozzarella cheese, eggs, garlic powder, Italian seasoning, and black pepper. Mix until well combined, ensuring all ingredients are evenly distributed.

          Preheat the Waffle Iron:

            - Preheat your waffle iron according to the manufacturer’s instructions. Brush the plates with a little cooking spray or olive oil to prevent sticking.
