Ingredients

1 lb ground chicken

2 tablespoons soy sauce

2 tablespoons teriyaki sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 cup bell peppers, diced (use a mix of colors)

1/2 cup green onions, sliced

1/2 cup carrots, shredded

1 tablespoon rice vinegar

1 tablespoon honey

1 head of butter or romaine lettuce, leaves separated

Sesame seeds for garnish

Red pepper flakes (optional, for heat)

Instructions

Prep the Sauce: In a small bowl, mix together the soy sauce, teriyaki sauce, rice vinegar, and honey until well combined. Set aside.

Cook the Chicken: In a large skillet or pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

Brown the Chicken: Increase the heat to medium-high and add the ground chicken. Cook, breaking it up with a spoon, for about 6-8 minutes, or until the chicken is browned and fully cooked.

Add Vegetables: Stir in the diced bell peppers, shredded carrots, and half of the green onions. Cook for an additional 3-4 minutes, allowing the veggies to soften slightly.

Combine with Sauce: Pour the reserved sauce over the cooked chicken mixture and stir well to combine. Let it simmer for another 2-3 minutes, allowing the flavors to meld.

Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the teriyaki chicken mixture into the center. Top with the remaining sliced green onions, a sprinkle of sesame seeds, and red pepper flakes if desired.

Serve: Roll the lettuce around the filling or fold it like a taco and enjoy immediately.
