1 cup all-purpose flour

1 tablespoon cornmeal

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon cumin

1 teaspoon chili powder

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 pound ground beef or turkey

1 small onion, finely chopped

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup canned black beans, rinsed and drained

1/2 cup salsa

Toppings (sour cream, guacamole, cilantro, diced tomatoes, jalapeños, etc.)

Instructions
 

Preheat your waffle maker: Plug in your waffle maker and set it to medium heat according to your model’s instructions.

    Prepare the waffle batter: In a large bowl, mix the flour, cornmeal, baking powder, salt, cumin, and chili powder. In another bowl, whisk together the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.

      Cook the meat filling: In a skillet over medium heat, sauté the chopped onion until translucent. Add the ground meat and cook until browned and fully cooked. Drain excess fat if necessary. Stir in the black beans and salsa, and simmer for 2-3 minutes until heated through.

        Cook the waffles: Lightly grease the waffle maker with cooking spray. Pour a scoop of waffle batter onto the center of the waffle maker, close, and cook until the waffles are golden-brown and crispy (about 3-5 minutes, check your maker's instruction).
