Mini Sweet Potato Breakfast Nests

2 medium sweet potatoes

4 large eggs

1 cup spinach, chopped

½ cup feta cheese, crumbled

¼ teaspoon garlic powder

¼ teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Peel the sweet potatoes and grate them using a box grater or food processor. Place the grated sweet potatoes in a clean kitchen towel and wring out any excess moisture. This will help them crisp up better.

      Season the Mixture: In a mixing bowl, add the grated sweet potatoes, olive oil, garlic powder, paprika, salt, and pepper. Mix well to combine all the flavors.

        Form the Nests: Grease a muffin tin with cooking spray or a little oil. Take about 2 tablespoons of the sweet potato mixture and press it into the bottom and up the sides of the muffin cup to form a nest shape. Repeat for all 8 cups.

          Bake the Nests: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the sweet potato nests are golden and crispy.

            Add the Filling: Once the nests are baked, remove them from the oven. Sprinkle the chopped spinach and feta cheese evenly inside each nest.

              Crack the Eggs: Carefully crack an egg into each sweet potato nest on top of the spinach and feta. Season each egg with a little salt and pepper.

                Bake Again: Return the muffin tin to the oven and bake for an additional 10-15 minutes or until the eggs are set to your liking.

                  Cool and Serve: Remove the tin from the oven and let cool for a couple of minutes. Carefully loosen the edges of the nests with a fork to help remove them from the tin. Garnish with fresh parsley before serving.
