Mini Strawberry Shortcake Jars

1 lb fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract (for whipped cream)

1 cup vanilla sponge cake, crumbled

Mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, and 1 teaspoon of vanilla extract. Gently toss them together and let sit for about 15 minutes to allow the strawberries to release their juices.

    Make the Whipped Cream: In a mixing bowl, pour the heavy whipping cream and add the powdered sugar and the remaining 1/2 teaspoon of vanilla extract. Using a hand mixer or stand mixer, whip the cream on medium speed until soft peaks form, about 2-3 minutes. Be careful not to overwhip.

      Layer the Jars: In small mason jars or dessert cups, create layers starting with a spoonful of crumbled vanilla sponge cake on the bottom. Next, add a layer of the macerated strawberries, followed by a generous dollop of whipped cream.

        Repeat the Layers: Repeat the layering process until the jars are filled, finishing with a layer of whipped cream on top. You can aim for 2-3 layers depending on the size of your jars.

          Chill and Serve: Place the jars in the refrigerator for at least 30 minutes to chill and allow the flavors to meld. Before serving, garnish the top of each jar with a mint leaf for a fresh touch.
