Ingredients

For the crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the strawberry topping:

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

Garnish:

Fresh mint leaves (optional)

Instructions

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Add the melted butter and mix until the mixture resembles wet sand. Divide the crust mixture evenly among small jars (about 4-6 jars), pressing it down firmly at the bottom.

Make the cheesecake filling: In a large bowl, beat the softened cream cheese and sugar together with an electric mixer until smooth and creamy. Add the vanilla extract and mix until well incorporated.

Whip the cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Be careful not to deflate the whipped cream.

Assemble the jars: Layer the cheesecake filling on top of the crust in each jar, filling them about 3/4 of the way full. Use a spatula to smooth the tops if needed.

Prepare the strawberry topping: In a small bowl, mix the sliced strawberries, sugar, and lemon juice together. Let them sit for about 10-15 minutes to macerate, developing juices.

Add the topping: Spoon the macerated strawberries over the cheesecake filling in the jars, generously covering the filling.

Chill the jars: Cover the jars with lids or plastic wrap and refrigerate for at least 2 hours, or overnight if possible. This helps the flavors meld and the cheesecake to set.

Serve: Before serving, optionally garnish with fresh mint leaves for a pop of color. Enjoy your mini strawberry cheesecake jars as a delightful individual dessert!
