1 package (12 oz) breakfast sausage links

6 large eggs

1/4 cup milk

Salt and pepper, to taste

1 tablespoon butter

1 cup shredded cheddar cheese

1 cup waffle mix (store-bought or homemade)

1 cup water (for waffle mix)

Maple syrup or hot sauce, for serving

Fresh chives or parsley, for garnish (optional)

Instructions
 

Make the Waffle Batter:

    In a large mixing bowl, combine the waffle mix and water according to package instructions. Stir until just combined and let it sit for a few minutes.

      Cook the Sausage:

        In a skillet over medium heat, cook the breakfast sausage links until browned and cooked through, about 8-10 minutes. Remove from the skillet and slice into small bite-sized pieces. Set aside.

          Prepare the Eggs:

            In a bowl, whisk together the eggs, milk, salt, and pepper. In the same skillet, melt the butter over medium heat. Pour the egg mixture into the skillet and scramble until fully cooked, about 3-4 minutes. Stir in the shredded cheddar cheese until melted. Remove from heat.

              Cook the Waffles:

                Preheat your waffle maker according to the manufacturer's instructions. Pour a ladleful of the waffle batter onto the preheated waffle maker and cook until golden brown, typically around 4-6 minutes. Repeat with the remaining batter.
