1 cup cooked chicken breast, shredded

1/2 cup basil pesto (store-bought or homemade)

1/2 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

1 French baguette or Italian bread, sliced into 1-inch pieces

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Toast Base: Place the sliced baguette on a baking sheet. Brush one side of each slice with olive oil to ensure a crispy and golden finish when baked.

      Mix Chicken & Pesto: In a mixing bowl, combine the shredded chicken with the basil pesto. Add salt and pepper to taste, mixing until the chicken is well-coated with the pesto.

        Assemble the Toasts: On the un-oiled side of each bread slice, distribute the pesto chicken evenly. Add a few cherry tomato halves on top of the chicken mixture. Finally, sprinkle shredded mozzarella cheese generously over each toast.

          Bake to Perfection: Place the baking sheet in the preheated oven and bake for about 10-12 minutes or until the cheese is bubbly and lightly golden brown.
