Ingredients
  

4 slices of whole wheat or white bread

4 large eggs

½ cup shredded cheddar cheese

¼ cup milk

2 tablespoons fresh chives, chopped (or green onions)

Salt and pepper to taste

Non-stick cooking spray or melted butter, for greasing

Optional toppings: diced tomatoes, cooked bacon bits, or spinach

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the bread: Use a rolling pin to flatten each slice of bread gently. This will help shape them easily. You can also use the back of a measuring cup to press them down if you prefer.

      Form the cups: Grease a muffin tin with non-stick cooking spray or melted butter. Take each flattened bread slice and press it into the muffin tin to form a cup shape. Make sure the bread comes up the sides of the cup.

        Mix the eggs: In a mixing bowl, whisk together the eggs, milk, shredded cheddar cheese, chives, salt, and pepper until well combined.

          Fill the cups: Pour the egg mixture evenly into each bread cup, filling them about ¾ full. If you'd like, sprinkle some optional toppings such as diced tomatoes, bacon bits, or spinach on top for added flavor.

            Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg is set and the bread is golden brown.

              Cool and serve: Once baked, remove the pan from the oven and let the toast cups cool for a few minutes. Carefully use a butter knife to loosen the edges before gently lifting them out of the muffin tin.
