Mini Egg & Cheese Bagel Pizzas

Ingredients
  

4 mini bagels (plain or whole wheat)

4 large eggs

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/4 cup fresh spinach, chopped

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil or cooking spray

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    In a bowl, crack the eggs and whisk them together. Add garlic powder, onion powder, salt, and pepper to taste. Mix well.

      Slice the mini bagels in half and place them cut side up on the prepared baking sheet.

        Heat the olive oil in a non-stick skillet over medium heat. Pour the beaten eggs into the skillet and cook, gently stirring, until the eggs are slightly undercooked, about 2-3 minutes. They will finish cooking in the oven.

          Evenly distribute the undercooked scrambled eggs on top of each bagel half.

            Sprinkle the shredded mozzarella cheese over the eggs on each bagel.

              Add the halved cherry tomatoes and chopped spinach on top of the cheese for extra flavor and nutrition.

                Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly, and the bagels are slightly toasted.

                  Remove from the oven and let cool for a couple of minutes. If desired, garnish with fresh basil leaves before serving.
