Mini Egg Bites with Cheddar and Veggies

6 large eggs

1/2 cup shredded sharp cheddar cheese

1/2 cup diced bell peppers (red, green, or yellow)

1/4 cup finely chopped spinach

1/4 cup diced onion

1/4 cup milk (or a non-dairy alternative)

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing the muffin tin

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or a light coat of olive oil to prevent sticking.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and whisk them well. Add the milk, garlic powder, salt, and black pepper to the eggs, continuing to whisk until the mixture is smooth and well combined.

      Incorporate the Veggies and Cheese: Stir in the diced bell peppers, chopped spinach, diced onion, and shredded cheddar cheese. Mix everything until the vegetables and cheese are evenly distributed throughout the egg mixture.

        Fill the Muffin Tin: Using a measuring cup or a ladle, carefully pour the egg and vegetable mixture into each muffin cup, filling them about 2/3 of the way full to allow for expansion.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are set in the center and slightly golden on the edges. You can check for doneness by inserting a toothpick; it should come out clean.

            Cool & Serve: Once baked, remove the mini egg bites from the oven and let them cool in the tin for about 5 minutes. Gently run a knife around the edges to help release them, then transfer the egg bites to a wire rack to cool further.
