Mini Chicken Taco Croissant Bites

2 cups cooked shredded chicken

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup salsa

1 tablespoon taco seasoning

1 package refrigerated crescent roll dough (8 oz)

1/4 cup chopped fresh cilantro (optional)

1/4 cup sliced black olives (optional)

Cooking spray

Sour cream and guacamole for serving (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, cream cheese, salsa, taco seasoning, and half of the chopped cilantro (if using). Mix well until all ingredients are thoroughly combined.

      Roll Out Croissant Dough: Open the crescent roll dough and separate it into triangles as per the package instructions.

        Fill Croissants: For each triangle, place about 1 tablespoon of the chicken filling towards the wide end of the triangle. You can also add a few slices of black olives if desired.

          Roll and Shape: Starting from the wide end, carefully roll up the triangle towards the point. Pinch the edges to seal in the filling.

            Arrange on Baking Sheet: Place the rolled croissant bites seam-side down on the prepared baking sheet. Leave some space between each bite.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the croissants are golden brown and fully cooked.
