Mini Chicken Shawarma Pita Pizzas

2 large whole wheat pita breads

1 cup cooked chicken, shredded

2 tablespoons shawarma seasoning (store-bought or homemade)

1 tablespoon olive oil

1/2 cup plain Greek yogurt

1 tablespoon tahini

1 teaspoon lemon juice

1/2 teaspoon garlic powder

1 cup chopped cucumbers

1 cup halved cherry tomatoes

1/4 cup red onion, finely sliced

Fresh parsley, for garnish

Feta cheese, crumbled (optional)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a mixing bowl, combine the shredded chicken with shawarma seasoning and olive oil. Toss until well-coated. If you made your own shawarma seasoning, ensure it's evenly mixed throughout.

      Bake the Pitas: Place pita breads on a baking sheet. You can lightly brush them with olive oil for extra crispiness. Bake in the preheated oven for 5 minutes to toast them slightly.

        Mix the Sauce: While the pitas are baking, prepare the sauce by combining Greek yogurt, tahini, lemon juice, and garlic powder in a small bowl. Mix until smooth, and season with salt and pepper to taste.

          Assemble the Pizzas: Remove the pitas from the oven. Spread a generous amount of the yogurt-tahini sauce over each pita. Top with the seasoned chicken, chopped cucumbers, halved cherry tomatoes, and red onion slices.

            Bake Again: Return the assembled pita pizzas to the oven and bake for an additional 10 minutes, or until the chicken is heated through and the edges of the pitas are crispy.

              Garnish and Serve: Once out of the oven, drizzle a bit more of the yogurt-tahini sauce on top, sprinkle with fresh parsley, and add crumbled feta cheese if desired. Cut the mini pizzas into quarters and serve warm.
