1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 bell pepper (any color), sliced

1 small onion, sliced

1 cup pizza sauce

1 cup shredded mozzarella cheese

1 package refrigerated pizza dough (or homemade)

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional: sour cream or guacamole, for serving

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Sauté the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, smoked paprika, cumin, chili powder, garlic powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and golden brown.

      Add the vegetables: Toss in the sliced bell pepper and onion, cooking for an additional 3-4 minutes until softened. Remove from heat.

        Prepare the pizza dough: Roll out the refrigerated pizza dough on a floured surface until it’s about 1/4 inch thick. Using a cookie cutter or a large glass, cut out circles (about 3 inches in diameter) and re-roll any leftover dough.

          Assemble the bites: Place the dough circles on the prepared baking sheet. Spoon a small amount (about 1 teaspoon) of pizza sauce onto each circle. Add a tablespoon of the chicken and veggie mixture on top, then sprinkle with shredded mozzarella cheese.

            Bake the pizza bites: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the dough is golden brown and the cheese is melted and bubbly.
