Mini Cheddar Cornbread Sliders

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup unsalted butter, melted

1 cup shredded sharp cheddar cheese

1 tablespoon honey (optional)

1 pound cooked and seasoned ground beef or turkey (optional, for sliders)

Sliced jalapeños or pickled peppers (for topping, optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat Oven: Start by preheating your oven to 400°F (200°C). Prepare a greased muffin tin or mini slider pan.

    Mix Dry Ingredients: In a large bowl, combine cornmeal, flour, baking powder, and salt. Whisk together until well blended.

      Combine Wet Ingredients: In another bowl, whisk together buttermilk, eggs, melted butter, and honey (if using) until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Avoid overmixing. Fold in the shredded cheddar cheese.

          Fill Muffin Tin: Spoon the cornbread batter into the prepared muffin tin or mini slider pan, filling each cavity about 3/4 of the way.

            Add Filling (Optional): If you’re using ground beef or turkey, add a small spoonful on top of half the batter in the muffin tin, then add a little more cornbread batter on top to cover.

              Bake: Place the pan in the oven and bake for 15-18 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool Slightly: Allow the sliders to cool in the pan for about 5 minutes, then carefully remove them and place on a wire rack.
