Mini Caprese Eggplant Sliders

Ingredients
  

1 large eggplant, sliced into 1/2 inch rounds

1 cup balsamic vinegar

1 teaspoon olive oil

Salt and pepper, to taste

1 cup fresh mozzarella cheese, sliced

1 large tomato, sliced

Fresh basil leaves

1 teaspoon dried oregano

4 whole wheat slider buns (or any preferred mini buns)

Optional: pesto for spreading

Instructions
 

Prepare the Eggplant:

    - Preheat your oven to 400°F (200°C).

      - Lay the eggplant slices on a baking sheet. Brush both sides lightly with olive oil and sprinkle with salt, pepper, and dried oregano. Roast in the oven for 20-25 minutes, flipping halfway through, until golden brown and tender.

        Make the Balsamic Reduction:

          - While the eggplant is roasting, pour balsamic vinegar into a small saucepan over medium heat. Bring it to a simmer and let it reduce for about 10-15 minutes until it thickens and coats the back of a spoon. Remove from heat and let it cool slightly.

            Assemble the Sliders:

              - Slice the mini buns in half. If desired, toast them lightly on a skillet or in the oven for added crunch.

                - Layer the bottom half of the bun with a slice of roasted eggplant, followed by fresh mozzarella and a slice of tomato. Add a few basil leaves atop the tomato.

                  Drizzle and Finish:

                      - Top with the other half of the slider bun.
