Mini Breakfast Tacos in Muffin Tin

6 large eggs

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cooked breakfast sausage, crumbled (or bacon)

1 cup cheddar cheese, shredded

1/2 cup cherry tomatoes, diced

1/4 cup green onions, chopped

1 package (10-count) small flour tortillas

Cooking spray

Optional toppings: sour cream, salsa, avocado slices, or fresh cilantro

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a muffin tin generously with cooking spray.

    Prepare Tortillas: Cut each small flour tortilla into a circle slightly larger than the muffin tin cups (about 4 inches in diameter). You can use a cookie cutter or the rim of a glass.

      Form Tortilla Cups: Gently press the tortilla circles into the greased muffin tin, forming little cups. You may need to use a small piece of tortilla to fill in any gaps.

        Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

          Layer the Fillings: Evenly distribute the crumbled sausage (or bacon), diced cherry tomatoes, and chopped green onions into the tortilla cups. Sprinkle a bit of the shredded cheddar cheese on top of each cup.

            Add Egg Mixture: Pour the egg mixture over the layered fillings in each tortilla cup until each is about 3/4 full. You may not need to use all the egg mixture.

              Sprinkle Additional Cheese: Finish by adding a bit more cheddar cheese on top of each cup for a delicious melty finish.

                Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg is set and the tops are golden brown.

                  Cool and Serve: Once done, remove the muffin tin from the oven and allow mini tacos to cool for a couple of minutes. Use a small knife to gently loosen each taco from the mold, and then carefully lift them out.

                    Serve with Toppings: Serve warm, adorned with your choice of sour cream, salsa, avocado slices, or fresh cilantro.
