4 small flour tortillas

4 large eggs

1/2 cup diced bell peppers (red and green)

1/2 cup chopped spinach

1/4 cup shredded cheese (cheddar or Monterey Jack)

1/4 cup cooked and crumbled breakfast sausage or diced cooked bacon (optional)

1 tablespoon olive oil or butter

Salt and pepper to taste

Salsa or hot sauce for serving (optional)

Instructions
 

Prep the Filling: In a medium bowl, whisk the eggs and season with salt and pepper. Stir in the diced bell peppers, chopped spinach, cheese, and cooked sausage or bacon if using.

    Cook the Eggs: In a skillet, heat the olive oil or butter over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are just set but still slightly soft. This should take about 3-4 minutes. Remove from heat and set aside.

      Assemble the Quesadilla Pockets: Lay one tortilla flat on a clean surface. Spoon a portion of the egg mixture onto one half of the tortilla. Fold the other half over to create a pocket. Repeat with the remaining tortillas.

        Cook the Quesadilla Pockets: Wipe the skillet clean and return it to the heat. Lightly brush or spray with olive oil. Place the quesadilla pockets in the skillet, cooking for about 2-3 minutes on each side or until golden brown and crispy.

          Slice and Serve: Remove from the skillet and let cool slightly. Cut each quesadilla pocket into wedges. Serve warm with salsa or hot sauce on the side if desired.
