Mini Breakfast Omelets (Egg Muffins With A Tater Tot Crust)

2 cups frozen tater tots

6 large eggs

1/2 cup milk

1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

1/2 cup diced bell peppers (mixed colors)

1/2 cup diced cooked ham or cooked bacon bits (optional)

1/4 cup chopped green onions

Salt and pepper to taste

Cooking spray or oil for greasing muffin tin

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the muffin tin: Grease a standard muffin tin with cooking spray or a light coating of oil.

      Create the crust: In a mixing bowl, take the frozen tater tots and place them in a food processor. Pulse until slightly crushed but still chunky (or you can use a large zip-top bag and crush them with a rolling pin).

        Form Tater Tot Crusts: Distribute the crushed tater tots evenly among the muffin tin cups, pressing them firmly against the bottom and sides to form a crust. Bake in the preheated oven for 15 minutes or until golden brown and slightly crisp.

          Prepare the omelet filling: In a separate bowl, whisk together the eggs and milk, adding salt and pepper to taste. Stir in the diced bell peppers, cooked ham or bacon (if using), shredded cheese, and chopped green onions.

            Fill the cups: Once the tater tot crusts are ready, remove them from the oven. Carefully pour the egg mixture over the tater tot crusts, filling each cup about three-quarters full.

              Bake the omelets: Return the filled muffin tin to the oven and bake for an additional 15-20 minutes, or until the eggs are set and the tops are lightly golden.

                Cool and serve: Allow the mini omelets to cool in the tin for a few minutes before gently removing them with a spoon or small spatula.
