Ingredients

1 can (20 oz) young green jackfruit in water (not syrup)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup BBQ sauce (your choice, homemade or store-bought)

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

12 slider buns (mini brioche or whole wheat)

Coleslaw (for topping; optional)

Pickles (for serving; optional)

Instructions

Prepare the Jackfruit:

Drain and rinse the jackfruit under cold water. Remove any seeds and trim the tough core pieces. Using your fingers or a fork, shred the jackfruit pieces into pulled meat-like strands.

      Sauté the Aromatics:

In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent (about 3-4 minutes). Stir in the minced garlic and cook for an additional minute until fragrant.

          Cook the Jackfruit:

Add the shredded jackfruit to the skillet, then pour in the BBQ sauce, apple cider vinegar, smoked paprika, and ground cumin. Season with salt and pepper. Stir to combine and let it simmer for 10-15 minutes, allowing the flavors to meld and the jackfruit to absorb the sauce.

              Prepare the Sliders:

While the jackfruit mixture is simmering, lightly toast the slider buns under the broiler or in a toaster. This will help prevent them from becoming soggy when plated.

                  Assemble the Sliders:

Once the jackfruit has absorbed the sauce and is heated through, remove it from the heat. Spoon a generous portion of the BBQ jackfruit onto the bottom half of each slider bun. If desired, add a scoop of coleslaw on top for extra crunch, before placing the top half of the bun.

                      Serve and Enjoy:

Serve the mini BBQ jackfruit sliders immediately with your favorite sides and pickles for an extra tangy crunch.
