Ingredients

1 cup rolled oats

1 ripe banana, mashed

1 cup milk (or dairy-free alternative)

1 large egg

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp salt

1 tablespoon honey or maple syrup (optional for sweetness)

Coconut oil or cooking spray (for greasing the pan)

Fresh banana slices, berries, or nuts for topping

Instructions

Blend the Oats: Place the rolled oats in a blender or food processor and blend until it reaches a fine flour consistency.

Mix Wet Ingredients: In a mixing bowl, combine the mashed banana, milk, egg, vanilla extract, and honey/maple syrup (if using). Mix well until smooth.

Combine Dry and Wet Ingredients: In the same bowl, add the oat flour, baking powder, cinnamon, and salt. Stir until just combined. Let the batter sit for about 5 minutes to thicken slightly.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with coconut oil or cooking spray.

Cook Pancakes: Use a tablespoon to scoop small amounts of batter onto the skillet for mini pancakes. Cook for about 2-3 minutes on one side or until small bubbles form on the surface, then flip and cook for another 1-2 minutes or until golden brown.

Stack and Serve: Remove pancakes from the skillet and create stacks of three or four. Top with fresh banana slices, berries, or a sprinkle of nuts for added crunch.

Enjoy! Drizzle with additional honey or maple syrup if desired, and serve warm.
