2 cups elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 tablespoons unsalted butter

1/4 cup all-purpose flour

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon paprika

2 cups milk

Salt and pepper, to taste

1 cup breadcrumbs (panko preferred)

1 large egg

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot over medium heat, melt the butter. Once melted, whisk in the flour, garlic powder, onion powder, and paprika. Cook for 1-2 minutes until bubbly.

      Add Milk: Gradually whisk in the milk, stirring continuously until the mixture is smooth and thickened (about 5 minutes).

        Incorporate Cheese: Lower the heat and add the cheddar, mozzarella, and Parmesan cheese to the sauce, stirring until fully melted and combined. Season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring until well coated. If the mixture seems too thick, you can add a splash more milk.

            Cool the Mixture: Transfer the mac and cheese mixture to a bowl and let it cool for about 30 minutes in the refrigerator until it sets a bit.

              Form the Poppers: Once cooled, take small spoonfuls of the mac and cheese mixture and form them into balls using your hands (about the size of a golf ball).

                Set Up Breading Station: In one bowl, beat the egg. In another bowl, place the breadcrumbs. Dip each mac and cheese ball into the egg, then roll in the breadcrumbs until fully coated.

                  Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                    Air Fry the Poppers: Lightly spray the air fryer basket with cooking spray. Place the mac and cheese poppers in the basket in a single layer, making sure they are not overcrowded. Spray the tops lightly with cooking spray.

                      Cook: Air fry the poppers for 8-10 minutes, or until golden brown and crispy on the outside. (You may need to flip them halfway through for even cooking.)

                        Serve: Carefully remove the poppers from the air fryer and serve hot with your choice of dipping sauce, such as marinara or ranch.
