2 cups elbow macaroni

1 cup cherry tomatoes, halved

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup red onion, finely chopped

1/2 cup bell pepper, diced (any color)

1/4 cup fresh cilantro, chopped

1 jalapeño, minced (optional for heat)

1 cup creamy dressing (such as ranch or a creamy cilantro-lime dressing)

Juice of 1 lime

1 teaspoon chili powder

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare Ingredients: While the pasta is cooking, chop the cherry tomatoes, red onion, bell pepper, cilantro, and jalapeño if using.

      Mix the Salad: In a large mixing bowl, combine the cooked macaroni, cherry tomatoes, black beans, corn, red onion, bell pepper, jalapeño, and cilantro.
