Mexican Lasagna Recipe

12 corn tortillas

1 lb ground beef or turkey

1 onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

2 cups shredded Mexican blend cheese

1 cup sour cream

1 tbsp taco seasoning

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sliced jalapeños, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet over medium heat, add the diced onion and minced garlic. Sauté until translucent. Add the ground beef (or turkey) and cook until browned. Drain excess fat if necessary.

      Season the Mixture: Stir in the taco seasoning, black beans, corn, and diced tomatoes. Season with salt and pepper to taste. Allow to simmer for about 5 minutes until heated through.

        Prepare the Tortillas: Lightly spray a 9x13 inch baking dish with cooking spray. Take 4 corn tortillas and layer them at the bottom of the dish, slightly overlapping.

          Layer Ingredients: Spread half of the meat and bean mixture over the tortillas, followed by a layer of 1 cup of shredded cheese and half of the sour cream. Repeat with another layer of 4 tortillas, the remaining meat mixture, another cup of cheese, and the rest of the sour cream.

            Final Layering: Top with the last 4 tortillas, the remaining cheese, and any additional toppings you desire (like sliced jalapeños).

              Bake: Cover the dish with aluminum foil (to prevent sticking, spray the underside of the foil with cooking spray). Bake for 25 minutes, then remove the foil and bake for an additional 15 minutes or until the top is bubbly and golden.

                Garnish and Serve: Remove from the oven and let it rest for 10-15 minutes. Garnish with chopped fresh cilantro if desired, slice, and serve hot.
