Ingredients

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/4 cup finely chopped fresh parsley

1/4 cup finely chopped onion

3 cloves garlic, minced

1 large egg

1/4 cup milk

2 tbsp Worcestershire sauce

Salt and pepper to taste

1 tsp dried oregano

1 tsp garlic powder

1/2 tsp onion powder

1/4 cup ketchup (for glaze)

2 tbsp fresh grated Parmesan cheese (for topping)

Fresh parsley, for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

Prepare a Baking Dish: Lightly grease a 9x5-inch loaf pan with cooking spray or line it with parchment paper for easier removal.

Combine Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, chopped parsley, chopped onion, minced garlic, egg, milk, Worcestershire sauce, salt, pepper, dried oregano, garlic powder, and onion powder. Use your hands or a fork to mix everything together gently until just combined.

Shape the Meatloaf: Transfer the mixture to the loaf pan, using your hands to shape it into a loaf. Make sure it's evenly distributed.

Add the Glaze: In a small bowl, mix the ketchup with the remaining 2 tablespoons of grated Parmesan cheese. Spread this mixture evenly over the top of the meatloaf.

Bake: Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C). The top should be golden brown and slightly caramelized.

Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps it maintain its juices. Garnish with additional fresh parsley if desired.

Enjoy: Serve your Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf with mashed potatoes or a side salad for a complete meal!
