4 large flour tortillas

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

1 cup baby spinach, chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup sun-dried tomatoes, chopped

1 red bell pepper, diced

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Olive oil, for cooking

Fresh basil, for garnish (optional)

Instructions
 

Prepare the filling: In a large mixing bowl, combine the crumbled feta cheese, shredded mozzarella, chopped spinach, sliced olives, chopped sun-dried tomatoes, diced red bell pepper, dried oregano, garlic powder, salt, and pepper. Mix well until all ingredients are evenly combined.

    Assemble the quesadillas: Lay one tortilla flat on a clean surface. Spread a generous amount of the Mediterranean filling mixture over half of the tortilla, leaving space around the edges. Fold the other half of the tortilla over the filling to create a semi-circle. Repeat this step for the remaining tortillas and filling.

      Cook the quesadillas: Heat a large non-stick skillet over medium heat and add a drizzle of olive oil. Once the skillet is hot, carefully place one quesadilla in the skillet and cook for about 3-4 minutes on one side until it’s golden brown. Flip the quesadilla and cook for another 3-4 minutes until the other side is also golden and the cheese is melted. Remove from skillet and keep warm. Repeat the cooking process for the remaining quesadillas.

        Slice and serve: Once all quesadillas are cooked, let them cool slightly before slicing into wedges. Garnish with fresh basil if desired. Serve warm with a side of tzatziki sauce or a simple salad for dipping.
