Mediterranean Chicken Wraps

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large whole wheat tortillas or pita breads

1 cup mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and sliced

1/2 cup tzatziki sauce (store-bought or homemade)

Fresh lemon wedges, for serving

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine olive oil, dried oregano, garlic powder, smoked paprika, salt, and pepper.

      - Add the chicken breasts to the bowl, ensuring they're well-coated in the marinade. Allow them to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for enhanced flavor.

        Cook the Chicken:

          - Preheat your grill or a grill pan over medium-high heat. Once hot, add the marinated chicken breasts.

            - Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from heat and let the chicken rest for 5 minutes before slicing it into strips.

              Prepare the Wrap Filling:

                - While the chicken is resting, prepare your fresh veggies. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives.

                  Assemble the Wraps:

                    - Lay a tortilla or pita flat on a clean surface. Spread a generous spoonful of tzatziki sauce in the center.

                      - Add a handful of the prepared veggie mix, followed by a few slices of grilled chicken.

                        - Fold the sides of the tortilla inward and roll it up from the bottom, securing the filling inside.

                          - Repeat for the remaining tortillas.
