4 boneless, skinless chicken thighs

1 cup orzo pasta

2 cups chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, chopped

1 cup cherry tomatoes, halved

1 cup spinach, packed

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

3 tablespoons olive oil

1 lemon, zested and juiced

1/4 cup feta cheese, crumbled

1/4 cup olives, sliced (optional)

Fresh parsley or basil for garnish

Instructions
 

Prepare the Chicken: Season the chicken thighs generously with salt, pepper, paprika, oregano, and thyme. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken and cook for about 5-7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and garlic until translucent, about 2-3 minutes. Add the diced bell pepper and zucchini, cooking for another 5 minutes until softened.

      Add Orzo and Broth: Stir in the orzo and cook for 1 minute to lightly toast it. Then pour in the chicken broth, add the lemon zest and lemon juice, and bring the mixture to a boil.

        Combine and Cook: Once boiling, reduce the heat to medium-low. Nestle the cooked chicken thighs back into the skillet, add the halved cherry tomatoes, and spinach. Cover and let simmer for 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.

          Finish and Serve: Once the orzo is cooked, taste and adjust seasoning with additional salt and pepper if needed. If using, sprinkle olives and feta cheese on top. Garnish with fresh parsley or basil before serving.
