Ingredients

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup chicken or vegetable broth

1/2 cup grated Parmesan cheese

1 tsp dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional)

Lemon wedges, for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp, seasoning them with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes, cooking them until they begin to soften, about 3-4 minutes.

Creamy Goodness: Pour in the heavy cream and chicken broth, stirring to combine. Allow the mixture to simmer for 3-5 minutes, or until it thickens slightly.

Combine Everything: Reduce the heat to low and stir in the grated Parmesan cheese and dried oregano. Add the cooked shrimp back into the skillet, then toss in the cooked fettuccine. If the sauce is too thick, add a little of the reserved pasta water to reach desired consistency.

Finishing Touches: Taste and adjust seasoning with additional salt and pepper if needed. For an extra burst of flavor, add lemon zest and mix well.

Serve: Divide the pasta among serving plates and garnish with fresh basil leaves. Serve with lemon wedges on the side for an additional zing!
