4 salmon fillets (about 6 oz each)

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and black pepper to taste

1 lemon (juiced and zested)

1 cup heavy cream

1/2 cup sun-dried tomatoes (chopped)

1 cup spinach (fresh)

1/4 cup freshly grated Parmesan cheese

Fresh basil leaves for garnish

Prep the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Salmon: Season the salmon fillets with salt, black pepper, oregano, thyme, and paprika on both sides.

      Sear the Salmon: In a large oven-safe skillet, heat olive oil over medium-high heat. Add the salmon fillets skin-side down and sear for about 4 minutes or until the skin is crispy. Carefully flip the fillets and sear for another 2 minutes. Remove the salmon from the skillet and set aside.

        Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add lemon juice, lemon zest, and heavy cream, stirring well to combine. Bring the mixture to a gentle simmer.

          Add in Veggies: Stir in the chopped sun-dried tomatoes and fresh spinach. Cook for about 2-3 minutes until the spinach wilts. Then, stir in the Parmesan cheese until melted and the sauce is creamy.

            Combine and Bake: Return the salmon fillets to the skillet, spooning some of the sauce over the top. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Garnish and Serve: Remove from the oven, garnish with fresh basil leaves, and serve hot over your favorite side (like pasta, rice, or a fresh green salad).
