2 salmon fillets (6 oz each)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

½ cup heavy cream

¼ cup chicken broth

½ cup sun-dried tomatoes, chopped

1 cup baby spinach

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Lemon wedges, for serving

Instructions
 

Prep the Salmon: Season the salmon fillets on both sides with salt, pepper, paprika, thyme, and oregano.

    Sear the Salmon: In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets, skin-side down. Sear for about 4-5 minutes until golden and crispy. Flip carefully and cook for another 3-4 minutes until cooked through. Remove salmon from the skillet and set aside on a plate.

      Make the Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.

        Add Cream and Tomatoes: Stir in the heavy cream and sun-dried tomatoes. Bring to a simmer and let it cook for about 2 minutes until it slightly thickens.

          Incorporate Spinach and Cheese: Add the baby spinach and stir until wilted. Then, slowly add the grated Parmesan cheese while stirring until melted and creamy.

            Return Salmon to Skillet: Place the seared salmon back into the skillet, spooning some sauce over the top. Cook for another minute to heat through.
