4 salmon fillets (6 oz each)

1 tablespoon olive oil

Salt and pepper, to taste

1 tablespoon minced garlic

1 teaspoon fresh thyme leaves (or 1/3 teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or 1/3 teaspoon dried rosemary)

1 lemon, zested and juiced

½ cup heavy cream

¼ cup chicken broth

1 tablespoon Dijon mustard

¼ cup sun-dried tomatoes (chopped)

¼ cup capers

½ cup fresh basil, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the salmon: Pat the salmon fillets dry with paper towels. Drizzle olive oil on both sides and season with salt and pepper.

      Sear the salmon: In a large oven-safe skillet, heat a little olive oil over medium-high heat. Add the salmon fillets, skin-side down, and sear for about 4-5 minutes until the skin is crispy. Carefully flip the fillets and sear for another 2 minutes. Remove the salmon from the skillet and set aside.

        Make the sauce: In the same skillet, lower the heat to medium and add minced garlic, thyme, and rosemary. Sauté for 1-2 minutes until fragrant.

          Add liquids: Pour in the lemon juice, chicken broth, and heavy cream, stirring to mix. Stir in the Dijon mustard, sun-dried tomatoes, and capers. Allow the sauce to simmer for about 3-4 minutes until it slightly thickens.

            Return the salmon: Place the seared salmon fillets back into the skillet, spoon some sauce over each piece, and sprinkle lemon zest on top.

              Bake: Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Garnish and serve: Once baked, remove the skillet from the oven, garnish with fresh basil, and serve with lemon wedges on the side.
