1 cup fresh raspberries, plus extra for garnish

1 cup heavy whipping cream

8 oz bittersweet chocolate, finely chopped

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup cream cheese, softened

1/4 cup graham cracker crumbs (for bases)

3 tablespoons unsalted butter, melted

Pinch of salt

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Crust:

    In a mixing bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix until the crumbs are well coated and have a sandy texture. Press this mixture firmly into the bottom of small serving cups or glasses to form the crust.

      Melt the Chocolate:

        In a heatproof bowl, place the finely chopped bittersweet chocolate. Heat it over a double boiler or in the microwave in 20-30 second intervals, stirring frequently until smooth. Allow it to cool slightly while you prepare the mousse.

          Make the Raspberry Puree:

            In a blender, pulse the fresh raspberries until smooth. Pour the raspberry puree through a fine-mesh sieve to remove the seeds, then set aside.

              Whip the Cream:

                In a large mixing bowl, beat the heavy whipping cream with an electric mixer until soft peaks form. Gradually add in the powdered sugar and continue whipping until stiff peaks form. Set aside.

                  Mix the Cream Cheese:

                    In another bowl, beat the softened cream cheese with the vanilla extract until smooth and creamy. Incorporate the melted chocolate into the cream cheese mixture, mixing until evenly distributed.

                      Combine Ingredients:

                        Gently fold in the raspberry puree into the chocolate cream cheese mixture. Then, carefully fold in the whipped cream until no white streaks remain, ensuring to maintain the light and airy texture.
