Ingredients

4 salmon fillets (6 oz each)

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 tablespoon soy sauce (or tamari for gluten-free)

2 garlic cloves, minced

Zest and juice of 1 orange

Zest and juice of 1 lemon

Salt and pepper, to taste

Fresh parsley, finely chopped (for garnish)

Lemon and orange slices (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a medium-sized mixing bowl, whisk together the maple syrup, Dijon mustard, olive oil, soy sauce, minced garlic, orange zest, orange juice, lemon zest, and lemon juice until smooth.

Marinate the Salmon: Place the salmon fillets in a shallow dish or a zip-top bag and pour the marinade over them. Make sure the salmon is well-coated. Allow it to marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a more intense flavor.

Prepare the Baking Dish: Line a baking sheet with parchment paper or lightly grease it with non-stick spray. This will ensure easy cleanup and prevent the salmon from sticking.

Roast the Salmon: Remove the salmon from the marinade and place it skin-side down on the prepared baking sheet. Season with salt and pepper to taste and drizzle a bit of the leftover marinade over the top for extra flavor, if desired.

Bake: Roast the salmon in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork and reaches your desired level of doneness. If you prefer a caramelized top, you can broil it for an additional 1-2 minutes at the end.

Garnish and Serve: Once done, remove the salmon from the oven and sprinkle with freshly chopped parsley. Serve with lemon and orange slices on the side for added brightness.

Enjoy your delightful Maple Dijon Roasted Salmon, bursting with sweet and tangy flavors!
