Ingredients

4 large sweet potatoes (about 4 pounds)

1/2 cup light brown sugar

1/4 cup pure maple syrup

1/4 cup bourbon

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

3 large eggs, beaten

1 cup chopped pecans

1 cup mini marshmallows (optional for topping)

Instructions

Preheat the oven: Begin by preheating your oven to 375°F (190°C).

Prepare the sweet potatoes: Peel the sweet potatoes and cut them into large chunks. Place them in a large pot of boiling water and cook for 15-20 minutes, or until tender. Drain and let cool slightly.

Mash the sweet potatoes: In a large mixing bowl, mash the cooked sweet potatoes until smooth. You can use a potato masher or a hand mixer for a creamier texture.

Mix in other ingredients: Add the brown sugar, maple syrup, bourbon, melted butter, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until everything is well combined.

Incorporate eggs: Stir in the beaten eggs until fully integrated into the sweet potato mixture.

Transfer to casserole dish: Lightly grease a 9x13-inch baking dish and pour the sweet potato mixture into it, spreading it evenly.

Top with pecans: Sprinkle the chopped pecans over the top of the casserole. (If you prefer a marshmallow topping, you can add them later halfway through baking.)

Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the edges are bubbly and the mixture is set. If using marshmallows, add them on top in the last 10 minutes of baking and bake until they are golden brown.

Serve and enjoy: Remove the casserole from the oven and let it cool slightly before serving. Enjoy this delightful dish, perfect for holiday gatherings!
