4 bone-in pork chops (about 1 inch thick)

1/2 cup pure maple syrup

1/4 cup bourbon whiskey

2 tablespoons Dijon mustard

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

2 garlic cloves, minced

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh thyme for garnish (optional)

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, bourbon, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, paprika, salt, and black pepper until well combined.

    Marinate the Pork Chops: Place the pork chops in a large resealable bag or a shallow dish. Pour the marinade over the chops, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Preheat the Grill/Pan: When ready to cook, remove the pork chops from the marinade (reserve the marinade for later). Preheat your grill or skillet over medium-high heat and add olive oil.

        Sear the Chops: Once hot, add the pork chops to the grill or skillet. Sear for about 4-5 minutes on each side until they develop a nice golden crust.

          Glaze the Chops: While the chops are searing, place the reserved marinade in a small saucepan over medium heat. Bring it to a gentle boil and let it simmer for 3-5 minutes to thicken slightly.

            Finish Cooking: After searing, brush the thickened glaze over the pork chops, then transfer them to the grill or reduce the heat to medium if using a skillet. Continue to cook for an additional 5-7 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
