Mango Tango Chicken Pitas

For the Chicken:

2 boneless, skinless chicken breasts

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

1 tablespoon olive oil

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

For the Pitas:

4 whole wheat pita bread rounds

1 cup mixed greens (spinach, arugula, etc.)

1/2 cup Greek yogurt

1 tablespoon honey (optional)

Instructions
 

Prepare the Chicken:

    - In a bowl, combine smoked paprika, garlic powder, cumin, salt, pepper, olive oil, and lime juice. Mix to form a marinade.

      - Add the chicken breasts to the bowl, ensuring they are well-coated with the marinade. Let them marinate for at least 30 minutes (or up to 2 hours for more flavor) in the refrigerator.

        Make the Mango Salsa:

          - In a mixing bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

            Cook the Chicken:

              - Preheat a grill pan or an outdoor grill over medium-high heat.

                - Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. (Internal temperature should reach 165°F/75°C).

                  - Let the chicken rest for a few minutes before slicing it into strips.

                    Assemble the Pitas:

                      - While the chicken is resting, warm the pita breads in a skillet for about 1 minute on each side or in a toaster, if preferred.

                        - Spread a layer of Greek yogurt on each pita. Drizzle with honey for added sweetness, if desired.

                          - Layer the mixed greens on each pita, followed by sliced chicken and a generous scoop of mango salsa.

                            Serve:

                              - Serve the Mango Tango Chicken Pitas warm, garnished with additional cilantro or lime wedges, if desired.
