Greek yogurt serves as the foundational ingredient for this recipe, and its health benefits are numerous. Rich in protein, Greek yogurt is an excellent choice for those looking to increase their protein intake while enjoying a creamy, indulgent treat. Unlike traditional yogurt, Greek yogurt is strained to remove excess whey, resulting in a thicker texture and a tangy flavor profile. This process also concentrates the nutrients, providing a higher protein content per serving compared to regular yogurt.

Ingredients

2 cups Greek yogurt (plain or vanilla)

1 ripe mango, peeled, pitted, and diced

2 tablespoons Tajín seasoning (adjust to taste)

1 tablespoon honey or maple syrup (optional, adjust to sweetness preference)

1/4 cup unsweetened coconut flakes (toasted, if desired)

1/4 cup chopped nuts (almonds, pistachios, or cashews)

Fresh mint leaves for garnish (optional)

Instructions

Prep the Base: In a mixing bowl, add the Greek yogurt. If you prefer a sweeter bark, mix in the honey or maple syrup until well incorporated.

Spread the Yogurt: Line a baking sheet with parchment paper. Pour the yogurt mixture onto the parchment paper and use a spatula to spread it evenly, about 1/4 inch thick.

Add the Mango: Distribute the diced mango evenly over the yogurt.

Sprinkle Tajín and Toppings: Evenly sprinkle the Tajín seasoning over the mango and yogurt, adjusting the amount based on your preference for spice. Then, sprinkle the coconut flakes and chopped nuts over the top.

Freeze: Place the baking sheet in the freezer and allow the yogurt bark to freeze for about 3-4 hours, or until it's completely solid.

Cut Into Pieces: Once frozen, remove the yogurt bark from the freezer. Use a sharp knife to cut it into irregular pieces or break it apart with your hands.

Garnish and Serve: If desired, garnish with fresh mint leaves before serving. Enjoy your sweet and spicy Mango Tajín Yogurt Bark as a refreshing snack or dessert!
