2 cups all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup balsamic vinaigrette

1/2 cup buttermilk

1/3 cup vegetable oil

2 large eggs

1 cup finely chopped fresh spinach

1/2 cup crumbled feta cheese

1/4 cup sun-dried tomatoes, chopped

1/4 cup walnuts, roughly chopped

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Mix Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until evenly combined.

      Combine Wet Ingredients: In another bowl, whisk together the balsamic vinaigrette, buttermilk, vegetable oil, and eggs until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula. Be careful not to overmix; some lumps are okay.

          Add Veggies and Cheese: Gently fold in the chopped spinach, feta cheese, sun-dried tomatoes, and walnuts until evenly distributed throughout the batter.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cavity about 3/4 full.

              Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
