4 medium zucchinis

1 cup marinara sauce (sugar-free)

1 cup shredded mozzarella cheese

½ cup pepperoni slices (or your choice of toppings)

½ cup sliced black olives (optional)

¼ cup grated Parmesan cheese

1 tsp Italian seasoning

1 tsp garlic powder

Fresh basil leaves for garnish (optional)

Salt and pepper to taste

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the center using a spoon, creating a boat shape. Leave about ¼ inch of zucchini flesh for stability.

      Season the Zucchini: Drizzle a little olive oil over the inside of each zucchini boat and season with salt, pepper, and half the Italian seasoning.

        Add Marinara Sauce: Spoon a generous amount of marinara sauce into each zucchini boat, filling them up about ¾ of the way.

          Layer Cheese and Toppings: Sprinkle shredded mozzarella evenly over the sauce and then add your toppings (pepperoni, olives, etc.) according to preference. Finally, top with grated Parmesan and the remaining Italian seasoning.

            Bake: Place the zucchini boats on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes or until the zucchini is tender and the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let them cool for a minute. Garnish with fresh basil leaves, slice, and serve warm.
