Low-Carb Cauliflower Tots

Ingredients
  

1 medium head of cauliflower (about 2-3 cups riced)

1 cup shredded cheddar cheese (or dairy-free cheese)

1 large egg

1/2 cup almond flour (or coconut flour for a nut-free version)

1/4 cup finely chopped green onions (or chives)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil spray (for greasing)

Instructions
 

Prep the Cauliflower:

    - Preheat your oven to 400°F (200°C).

      - Remove the leaves and stem of the cauliflower, cut it into florets, and steam it until tender (around 8-10 minutes). Alternatively, you can microwave it for about 5-7 minutes in a covered bowl with a splash of water.

        Rice the Cauliflower:

          - Once cooled, place the steamed cauliflower in a clean kitchen towel or cheesecloth. Wring it out thoroughly to remove excess moisture. Then, use a food processor to pulse the cauliflower florets until they resemble rice or fine crumbs.

            Mix the Ingredients:

              - In a large mixing bowl, combine the riced cauliflower, shredded cheese, egg, almond flour, green onions, garlic powder, onion powder, paprika, salt, and pepper. Stir until everything is well incorporated and forms a cohesive mixture.

                Shape the Tots:

                  - Using your hands, take small portions of the mixture and shape them into tot-like forms (about 1.5 inches long). Place the formed tots on a baking sheet lined with parchment paper.

                    Bake:

                      - Spray the tops of the tots lightly with olive oil spray to help them crisp up. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy, flipping them halfway through for even cooking.

                        Serve:

                          - Once baked, let the cauliflower tots cool for a few minutes before serving. They can be enjoyed as is or with your favorite dipping sauce, such as ranch or marinara.
