2 large russet potatoes

2 tablespoons vegetable oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon sea salt

1/2 teaspoon black pepper

1 cup shredded Cajun-style cheese blend (such as Pepper Jack or Cheddar)

1/2 cup cooked and crumbled andouille sausage

1/4 cup sliced green onions

1/4 cup sour cream

1/4 cup spicy remoulade sauce (for drizzling)

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash and peel the russet potatoes, then cut them into thin fries or wedges, ensuring they are roughly the same size for even cooking.

      In a large bowl, toss the cut potatoes with vegetable oil, smoked paprika, garlic powder, onion powder, cayenne pepper, sea salt, and black pepper until all fries are thoroughly coated.

        Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

          Once the fries are done, remove them from the oven and sprinkle the shredded Cajun-style cheese evenly over the hot fries. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

            In a separate skillet, lightly crisp the crumbled andouille sausage over medium heat, about 3-4 minutes.

              Once the cheese is melted, remove the fries from the oven and top them with the crispy andouille sausage and sliced green onions.

                Drizzle the sour cream and spicy remoulade sauce over the top for an extra kick and creaminess.
