Loaded Nachos with Cheese Sauce

1 large bag of tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) refried beans

1 cup cooked ground beef or shredded chicken (optional)

1 cup diced tomatoes

1 jalapeño, thinly sliced (optional for heat)

1/2 cup sliced black olives

1/2 cup sliced green onions

1 cup guacamole

1 cup sour cream

Fresh cilantro, for garnish

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Instructions
 

Preheat your Oven: Preheat the oven to 350°F (175°C).

    Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt 2 tablespoons of butter. Stir in 2 tablespoons of all-purpose flour to create a roux, cooking for about 1 minute. Gradually whisk in 1 cup of milk, and cook until slightly thickened, about 2-3 minutes. Add the shredded cheddar and Monterey Jack cheese, stirring until fully melted and smooth. Season with chili powder, cumin, and garlic powder. Remove from heat.

      Layer the Nachos: On a large baking sheet or a serving platter, spread an even layer of tortilla chips. Spoon dollops of refried beans over the chips, followed by the cooked ground beef or chicken (if using). Sprinkle the diced tomatoes, jalapeños, and black olives over the top.

        Add the Cheese Sauce: Drizzle generous amounts of the prepared cheese sauce over the nacho layers.

          Bake the Nachos: Place the loaded nachos in the preheated oven and bake for about 10-15 minutes, or until the cheese is bubbling and the chips are slightly golden.
