Ingredients

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 cups cooked brown rice or cauliflower rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup sour cream (or Greek yogurt)

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: sliced jalapeños, salsa, or hot sauce

Instructions

Prepare the Chicken: In a medium bowl, mix together olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the chicken thighs, ensuring they are evenly coated with the spice mixture. Let marinate for at least 20 minutes (or up to 2 hours in the fridge for more flavor).

Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the meat is no longer pink. Remove from heat and let rest for 5 minutes before slicing.

Prepare the Base: In serving bowls, start with a base of cooked brown rice or cauliflower rice, distributing it evenly among each bowl.

Layer on the Goodies: Add a generous scoop of black beans and corn to each bowl. Follow with the sliced grilled chicken, cherry tomatoes, diced avocado, and shredded cheese.

Add Fresh Flavors: Top each bowl with a dollop of sour cream, a sprinkle of fresh cilantro, and a squeeze of lime juice.

Finish with Extras: If desired, add sliced jalapeños, salsa, or a dash of hot sauce for an extra kick!

Serve and Enjoy: Serve immediately while warmed, allowing everyone to mix and match their components for a personalized burrito bowl experience!
